Heat a large oven to frying temp
add oil, diced onion and caramelize.
Add a large chuck roast and sear all sides, move to low heat for 1/2 hour then add 2 cups of a good red wine and 1 cup water. season with salt, pepper, rosemary, and thyme. move to medium heat and add whole pealed potatoes,carrots and celery, place hot coals on lid and cook for 1 hour. I like to use Pillsbury biscuits and place on top during the last 15 minuets of cooking.
