This care addresses an oven that has already been seasoned.
Scrape any remaining food from the oven and add clean water, slowly bring to a low boil. Empty water and wipe clean with paper towels. Allow to air dry. Bring oven up to Medium cooking temps and apply a thin coating of vegetable oil to the inside and exterior. DO NOT USE SOAP. Wipe excess oil with a clean paper towel.
Be sure to wipe any excess oil from the inside of the oven. I always place several plastic drinking straws around the edge before placing the lid on this will allow air to circulate in the oven. A tight lid will cause an oven to turn rancid. Store in a dry cool location.
RESTORING A RANCID OVEN
If not properly cleaned and stored an oven will turn rancid and cannot be used for cooking. If this happens you must start over. First slowly bring the oven up to a very high cooking temp. Best to do this outside either in a gas grill or camp fire because it will smoke and smell. The oven should have a white powdery appearance when it has been burnt clean. Be VERY CAREFUL with this step so you don't crack your oven. This is more heat that normal for the oven but you must burn out the oils from the metal's pores. The oven should now be ready for seasoning.
Now you need to begin the seasoning process
After it cools add water and bring to a boil wipe clean and allow it to air dry. Bring oven to a medium temp and apply vegetable oil inside and out. Allow to cool and wipe excess oil. Bring back to medium temp and re-oil. Repeat this step 3 times. Your oven is now ready for use.
Proper care and cleaning an oven should serve you well for many years. I have only restored an oven one time after I lent it to a friend who returned it after months with burnt food in it and rusted on the exterior. He has since bought his own because he knows better than to ask for mine again.
